Fennel, Orange and Olive salad

A winter treat: fennel, orange and olive salad

You won’t find a more refreshing salad than this one with fennel, orange and olives.  Enhance it with with tender baby greens, olives, shaved parmesan and the best extra virgin olive oil you can buy.  I first had a version of this salad at a restaurant in the hilltop, medieval  Tuscan town of Anghiari, just 6 kilometers from our town of Sansepolcro.  The beauty of this salad is that it’s easy to put together, takes only minutes and, as most Italian food, very healthy dish.  Hey, I forgot to add the parmesan shaves to the dish above!

Traditional Amaretti

imageThese almond macaroons have a wonderfully robust almond flavor.  Not only do they contain chopped almonds but almond extract that really packs a punch.  These amaretti are all white because every ingredient in the recipe is…we’ll, white.  Strange, that.  I tried baking them longer so they’d get a bit of a tan but that didn’t work and I was in danger of burning the bottoms, which do acquire a tan.  No matter, they’re super crunchy and delicious.

Parmesan bread twists make a simple Italian recipe that takes just minutes to make.

This is one of those recipes where you buy some commercial product and mess with it.  But that commercial product makes life so much easier…and simple. In this case, it’s refrigerated bread sticks.  Here they’re jazzed up with spices and cheese and they take on some real personality.
